If it's meat-based, then it would also have pork filling. Now being a dumpling expert, I gathered all the ingredients and started making them, capturing the entire process, so David can refer to it whenever he craves these dumplings or celebrates the Chinese New Year.
Ingredients:
Water, 300 grams
All-purpose flour, 546 grams
Ground pork, 150 grams
Peeled shrimp, 150 grams
Chives, 300 grams
Eggs, 2 medium
Condiments: 1 tbsp soy sauce, 1/2 tbsp sesame oil, 1/2 tbsp cornstarch, 1 tsp oyster sauce, 1 tsp laoganma, 3-4 grams of salt
Vegetable oil, 1 tbsp

Steps:
Step 1: For the dough, mix water with flour at a ratio of 55%. Let it sit for about 2 hours, and mix once in the middle.

Stir-fry eggs and stir vigorously to create fine pieces.
Step 3: Add all condiments to ground pork, mixing in one direction using chopsticks until consistent. Chop shrimp into small pieces, add to the pork mixture, and mix well.
Step 4: Chop chives into small pieces and mix them into the filling from step 3.
Step 5: Use
half of the dough, massage it into a circle, then break and roll it into a long
piece. Make small dough pieces (jizi) either by hand or with a knife. Each jizi
should be about 10 grams. Roll them into thin wrappers.
Step 6: Add
about 10 grams of filling and fold into dumplings.
Step 7: Repeat
the above procedures with the second half of the dough. The dough will make approximately 80 dumplings with a little
excess of dough.
Step 8: Boil 12
cups of water in a large pot, add half of the dumplings, stir gently until
boiling again. Reduce heat until barely simmering. Cover with a lid and
continue for 5 minutes. Stir gently a few times. Remove dumplings onto plates
and agitate occasionally to prevent sticking. Boil the second half of the
dumplings in the same pot or freeze them.
Step 9:
Delicious 肉三鲜饺子
(SanXian Dumplings) are now ready for enjoyment. The dumplings are tasty on
their own, with no need to dip in sauce.
Step 10: If
desired, you can dip in the sauce by mixing soy sauce, Zhenjiang vinegar,
sesame oil, and minced garlic with or without laoganma.
